Oaks.Life Brandied Golden Raisin Oatmeal Cookie

This is a spin on the traditional oatmeal cookie that was given to me by my great aunt. I altered it a bit, made it and was such a favorite instantly among the boys.

INGREDIENTS

  • ½ cup golden raisins
  • ¼ cup brandy
  • 1 stick of butter (1 cup)
  • 1 tsp vanilla essence
  • 1 ½ cup flour
  • 3 cups oatmeal
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ cup – ¾ cup maple syrup (depends on how sweet you want it)
  • ½ cup unsweetened apple sauce
  • ½ cup nuts (I like raw walnuts for this recipe)

DIRECTIONS

Preheat oven to 350 F

  1. In a small pan and on low heat, simmer the golden raisins in brandy until liquid is gone and the raisins are plump. Set aside to cool.
  2. Melt the stick of butter in another small pan and when it’s about halfway melted, add vanilla essence into it and swirl to mix. Once completely melted, set aside.
  3. While #1 and 2 cool down, in a large bowl, whisk flour, oatmeal, salt and baking soda together.
  4. Add the apple sauce and maple syrup into the melted butter (#2) and mix well until combined. Then add #1 and mix well.
  5. Add #4 into #3. Mix until combined. Don’t overwork it. Just make sure you don’t see spots of flour.
  6. Line a cookie sheet with parchment paper. Take a heaping tbsp of #5 and place on parchment paper. Flatten slightly. Repeat until your bowl is empty.
  7. Place cookie sheet into the oven for 20 – 25 minutes or until golden brown, cool and devour!

NOTES

We don’t eat a lot of sweets and if we do, it’s naturally sweetened with fruits or maple syrup or honey. Therefore, I didn’t add much maple syrup and tasted plenty sweet to us because of the brandied golden raisins and apple sauce.

You can adjust the amount of nuts and raisins to your liking. I like it with more nuts but it’s easier for the kids not to eat a cookie with chunks of nuts to chew through so I either make half the batch with nuts or just add less. I would add 1 cup of nuts if it’s just for me and hubs and increase the raisins to around ¾ cup with slightly less than ½ brandy.

We liked it so much I didn't get a chance to take any photos! Will do that next time and update photo.
